Squirrel’s Chocolate Birthday Cake

I made my friend a birthday cake and I wanted to try a new chocolate cake recipe. I found this delicious chocolate cake with chocolate ganache. It is the best chocolate cake I’ve ever tasted! If fact the whole thing went very quickly because it was so delicious! This is definitely my new go to chocolate cake recipe.

Mini Wedding Cake Sample

I made a wedding cake with three different layers and I wanted to see how they all looked and tasted, so with each layer I baked a mini square cake. The bottom layer was vanilla with rainbow hundreds and thousands, the middle pink lemon sponge and the top yellow coconut sponge. I made it into a mini tower and covered it in lemon buttercream icing and I put blueberries on top. The colours looked great together!

Lemon Sunshine Cupcakes

I’ve never really made cupcakes, when I was younger we used to call them fairy cakes and they were a lot smaller than these massive cupcakes you can get now, which I feel are too big a portion for a treat. I wasn’t very excited when someone asked me to make some cupcakes , but I have to say I really enjoyed making and icing them. These are vanilla cupcakes with lemon sunshine yellow icing and I was really please how they turned out.

Annabel’s Baek-il

I went to North Carolina to meet my new niece Annabel recently and while we were there she had her Korean Baek-il (100th day birthday). So my sister and brother-in-law who had lived in Korea for a year, made a delicious Korean feast and I made a cake! A classic Korean Matcha green tea sponge with sweet Adzuki bean filling. She also made some Hhodoek pancakes (think Game of Thrones!) which were delicious and sweet. We all enjoyed the dessert and Annabel enjoyed her milk!

Coconut Lemon Vodka Cake

I have made this delicious cake two years running at the Coast Mountain Photography year end party as it is such a hit. Coconut flavoured sponge with a lemon-vodka curd filling and lemon buttercream icing, covered in shredded coconut. The recipe is from the BC Liquor Taste Magazine.

White Chocolate Cheesecake

I had a lot of cream cheese left over from work so I made a White chocolate cheesecake from a recipe I used to make in France when I was a chalet host. I adapted it slightly and put blueberries on top. It was as always, delicious. The base was made from chocolate covered digestives so you don’t have to add chocolate and the top made from cream, white chocolate and cream cheese.White Chocolate Cheesecake_027

Gluten Free Chocolate Cake with Coconut

I made this cake for a dinner party where I knew people couldn’t eat dairy. The Chocolate cake is gluten free and dairy free. I then made a whipped coconut cream icing which is also DF & GF.  Then sprinkled coconut shreds on top.

Clothes Swap Shortbread

I was going to my first clothes swap and was told to bring an appie. So I made these shortbreads into the shape of trousers and tops. I ran out of time to decorate them but you could take them and some icing and people could decorate there own. Same goes with any theme party/kids party, make the cookies and get the guest to decorate while they eat.

Mini Square Cakes

Mini square cakes, made from cut offs from the sitski cake I made for the Whistler Adaptive Party. Vanilla sponge with lemon buttercream icing. An alternative to cup cakes.

Sitski Cake For Whistler Adaptive

We were having our end of year party at Whistler Adaptive Sports Program and I made the cake. A few of us had just passed out sit-ski exam that day and we have lots of sit-ski lessons, that I decided the cake should be a ski run with a sit-skier on in. The cake was a vanilla sponge with lemon buttercream icing.  I made the sit-skier out of Fondant icing (it holds its shape well) and made a groomed run with fresh corduroy and trees poking out the snow (this is what the resort looked like this year due to lack of snow!)  It was well received!
